    Hey,
    I’m new to GF living. I’ve had to start for health reasons – not Celiac, but definitely gluten intolerant.
    Do you have any more main dish recipes that you could share? I love some of the recipes you have and can’t wait to try them, but I don’t have a large repertoire of meals to choose from to cook lunch/dinner, so it’s pretty much the same thing week after week. Unfortunately, I am a very picky eater and having to now eat GF, it makes matters worse. So, if you have any more suggestions, I’d be grateful!

      Lately I’ve been considering doing more cooking instead of baking (I’ve always loved baking, but I feel like I need to widen my horizons a little bit). I was thinking that main dish recipes wouldn’t be very useful to people because it’s usually baked goods that people have the hardest time with and miss the most. However, you’ve just convinced me otherwise! Gluten free eaters need variety in their diets just as much as other people, and cooking options are definitely more limited on the gluten free diet. I’ll certainly be doing more cooking in the future. For now, here’s a quick list of what we usually eat (we eat a lot of meat since my parents grow organic beef). We don’t eat ALL of these things for every meal, of course, but usually a combination:
      Breakfast: homemade beef sausages cooked with onions, kale, and red peppers, eggs, hashbrowns, pancakes/waffles/french toast/muffins, yogurt, granola, oatmeal.
      Snacks: Apples and peanut butter, smoothies or hot chocolate, granola bars, paleo cookies (I’m hoping to post a recipe for these when I perfect it), celery with peanut butter and raisins, yogurt.
      Lunch/Dinner: Soup made with onions, sweet potatoes, squash, celery, and ground beef (I love it seasoned with cumin and rosemary!), chuck roast cooked with onions and carrots with squash and salad on the side, salmon with potatoes/salad/squash, burgers with homemade ketchup (usually we don’t have buns) and salad, chicken soup & dumplings, homemade pizza, gluten free spaghetti, seasoned ground beef with tomato sauce and sweet potato fries and salad on the side, other meat/vegetable combinations. In the summer we usually eat more fresh garden veggies, such as tomatoes, green beans, sweet corn, and peas.

      Anyway, sorry if that was a little long. I really should just post a full article with weekly menu plans & such. For now, I’m planning on cooking way more often! This was actually one of my 2014 goals, so you’ve just given me extra motivation. 🙂

    I am doing gluten free and am interested in also being cane sugar free and would appreciate any recipes without sugar. Honey and maple syrup are okay but I am sensitive to regular sugar.

      Hey!
      Avoiding sugar is definitely a good idea. I’ve also been trying to avoid eating it (especially in quantity) lately. I’m just starting to come out with some sugar free (and usually dairy/grain free) recipes, which you can find in the “Recipes” section under “Paleo” (http://www.imglutenfree.com/paleo-recipes/). In savory recipes I’ve found that you can usually replace the little bit of sugar that there might be with honey. Desserts and breads are a little harder. I’ve been working on some sugar free recipes lately, so you’re likely to see more of them soon.

    Hi there…reading your article in MaryJanes Farm Magazine….wow what a smart young lady you are….I already told 2 friends about the article and your site….I dont think I have this problem, I can pretty much eat anything, unless I just dont like it, but if it could help with weight loss…haha….
    How do you know for sure you have celica disease? only by dr or you figured it out yourself?
    Again, what a smart young lady you are….Looking forward to your posts….

    another thought, you should really think about publishing a cookbook, I could see you on QVC or where I love to buy books and cookbooks, SAMS and BJs Wholesale stores…….

      Thanks for your comments Kris! I’ve definitely thought about a cookbook and I’d love to write one eventually, but I don’t think I’m quite ready for that yet. 🙂 For now I plan to just stick with the blog.

    I was so excited to read about your blog in the MaryJanes Farm magazine! We went gluten free a couple months ago to try to help my son with some behavioral and focusing problems and for myself with my frequent migraines. I’m happy to report that his teachers are seeing an immense improvement in his behavior and my headaches have been less frequent! My other son’s birthday is this Friday and he has requested a chocolate cake so I’ll be trying out one of your recipes. Sounds like they are delicious! I look forward to seeing more recipe ideas. You have a very bright future ahead of you!

    Hi Linnaea!
    I just found your blog and I think you are AMAZING!! I have 2 granddaughters with celiac. There are 5 kids in the family, 2 are diagnosed but I have a suspicion that the other 3 have problems with gluten. My daughter is very busy and I will be the baker. I did not try your recipes yet but I am very exited to start. Just ordered a bunch of whole grain gluten free flours and as soon as I will get them I will start. I have a question: my grand kids LOVE pasta. So far store pasta is not very good. Did you ever tried to make fresh pasta? I am probably too ambitious and it’s not even possible. Thank you and I am looking forward to your answer.

      I have not tried fresh pasta before but I really want to! If you do, please let me know how it works. As for gluten-free pasta you can buy, I recently tried Barilla’s (found it at walmart!) and it was pretty good–nice flavor and not at all sticky or gummy.

      Glad you like it, Abigail! As for why I do this, “inspired” might be a strong word. Really I’ve just always loved baking. When I was around eleven my Mom encouraged me to start a website and I’ve been doing it (and loving it) ever since!

    Hey,

    I’ve been eating GF for a year now, no celiac though. There are a BUNCH of really gross gluten free recipes and some really bad websites but yours seems to be a really good one!!! So THANK you for bringing your talent of making GF food available to more and more people!

      I usually just replace it with rice flour. They have a similar consistency and in all the recipes I’ve substituted it in, I haven’t really noticed much difference in texture or rise. There will be a different appearance and taste, because teff flour has more of an earthy flavor and is way darker in color.

    I need to remake recipes because I’am gluten, dairy ,some rice? Chocolate and baking yeast! So I like a challenge and I will create a sourdough bread with grains I can use! Hope to come up with a cookbook for myself!

      Jeannie, I would so buy that book. I’ve been experimenting with sourdough a bit and absolutely LOVE it! It tastes good, rises better, and is actually really fun to use. 🙂

    I am very much looking forward to trying your Olie Bollen recipe this Christmas season. I do notice that the instructions mention molasses but the quantity is not listed in the ingredients list. Please let me know how much molasses to use.

      Hey Connie! Sorry about that. I usually use about 1-2 teaspoons of molasses just for added richness in the taste. You can skip it altogether though if you want!

    Him I couldn’t stop reading last night! Love your blog. I only have a few questions. I am 58 and have ‘never had a problem with, milk. Now, I’m down to 1% because any stronger… I get very nauseated. I can use it in recipes though without a problem. Last year had some ‘G.I.’ problems. What is it about ‘gluten’ that we can just do without? As you can tell I haven’t read a lot about it. Since the G.I. along w/ hypothyroidism. Hospitalized 5 days my weight went from 128-133lbs. to 170lbs. I also now have ‘Edema attacks’ maybe from the meds. I just don’t know! An accident messed up my back so I’m somewhat limited. I love working out in the water and I take walks, & household chore so mainly, I’m ‘Needing a true healthy way to eat’ and see myself again. I have tried diets and also cut out many things but I was losing proper nutrients. You don’t have to print this, I know it’s sooo long. But PLEASE ANY ADVICE WOULD BE SO APPRECIATED.     susantatum58@yahoo By the way… ohhh sugar is my downfall BUT I’ve subd. it with stevia but the pounds are still with me. ONLY 5 FEET!
