This recipe is perfect for you if you can’t eat oats. If you would like to make a molasses granola, replace the cinnamon with two tablespoons of molasses.
1 cup rice flour
½ cup cornstarch
¼ teaspoon xanthan gum
2 tablespoons sugar
¼ teaspoon salt
1 teaspoon cinnamon.
3/8 cup (¾ of a stick) butter
1 egg
2 tablespoons honey
1 cup various nuts
1 cup raisins and/or craisins
Grease a large cookie sheet with butter. Preheat the oven to 350 degrees F.
Combine all the ingredients except the nuts and raisins in a large bowl and knead with hands until blended. The mix should have a crumbly consistency.
Add the nuts and raisins and mix until blended. Spread on the cookie sheet and place in the oven.
Cook for fifteen minutes, stirring every five minutes, until the flour crumbles are lightly browned.
Remove from oven and let sit on the pan for fifteen minutes, allowing it to dry out. Then put it in a canister/container on your shelf.
