This simple 6 ingredients, paleo and gluten free lemon ginger salad dressing takes just a few minutes to make and is way better for you than unhealthy grocery store alternatives!

Serves: About ¾ cup dressing
Ingredients
1 clove garlic, crushed and finely chopped
½ cup olive oil
⅓ cup fresh lemon juice
1 tablespoon maple syrup
1½ teaspoons fresh grated ginger
Pinch of pepper
Instructions
Put all of the ingredients in the blender and blend until combined and smooth.
Pour into a jar, refrigerate until use. If you refrigerate for more than 1 hour, the oil will harden up a bit, so you may have to blend it again until use.
