Peanut Butter Cookie Dough Brownies

This recipe is cookie dough, chocolate fudginess, and easy all in one.

Serves: 1 dozen brownies
  • --The Brownies--
  • 1 stick butter
  • ½ cup rice flour
  • ½ cup extra dark dutch cocoa (that stuff is delicious)
  • ½ cup sugar (you can add a bit more if you like ‘em sweet, but I figure that extra dark brownies make a good contrast to sweet peanut butter cookie dough. But it’s totally your call)
  • 2 eggs
  • --The Cookie Dough--
  • ¼ teaspoon salt
  • ½ cup sugar
  • ½ cup butter, softened
  • ¼ cup milk
  • 1 teaspoon vanilla extract (use the real stuff. Who likes fake vanilla extract?)
  • ½ cup peanut butter (you can use creamy or crunchy)
  • 1 ½ cups rice flour
  • 1 cup chocolate chips (itty bitty ones are good, but as I didn’t have any I just used some regular extra dark ones)
  1. --For the Brownies--
  2. Preheat the oven to 350 degrees F. Butter a nine by thirteen inch glass baking pan.
  3. Melt the butter in the microwave or in a pan on the stovetop.
  4. In a bowl, combine the flour, sugar, and cocoa.
  5. Add the butter and eggs and stir until blended.
  6. Pour the brownie mix into the pan. Stick them in the oven for half an hour or less, checking now and then. The brownies should be soft but fairly firm to touch. Remember, though, you want them fudgy, so don’t overcook.
  7. While the brownies are cooking, make your awesome raw peanut butter cookie dough.
  8. --For the Cookie Dough--
  9. In the bowl of your electric mixer, beat the sugar, salt and butter until fluffy.
  10. Add the milk and vanilla extract and beat until blended.
  11. Add the peanut butter and beat.
  12. Add the flour and beat.
  13. Stir in the chocolate chips. If you want you can also add nuts.
  14. Once the brownies are fully cooled, spread the peanut butter cookie dough over them. Then stick the whole deal in the fridge for about an hour.
  15. That’s all there is to it. Didn’t I say something about easy?
