Sweet and crunchy sugar cookies.

  • ¼ cup (1 stick) butter, room temperature
  • 1 cup white sugar
  • 1 large egg
  • ½ cup cornstarch
  • 1 cup rice flour
  • ½ teaspoon xanthan gum
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  1. Blend the butter and sugar together with the blender until combined. Add the egg and beat until smooth. Add the remaining ingredients and beat until combined.
  2. Put dough on wax paper and shape into a rectangle about 1 inch thick. Fold the wax paper around the dough and refrigerate for 30 minutes.
  3. While the dough is chilling, preheat the oven to 350 degrees F and grease a large cookie sheet with butter.
  4. When the dough is fully chilled, remove and shape dough into balls. Place them about 2 inches apart on a cookie sheet and flatten them. If you'd rather make rectangular 'flag-cookies', shape them into rectangles ¼ inch thick, 1 inch wide, and 2 inches long. Or you can shape cookies with the dough into little gingerbread men or something.
  5. Anyway, put the cookies on the cookie sheet about two inches apart and cook on a rack in the center of the oven. Cook for fifteen minutes, until edges are lightly browned.
  6. Remove the pan from the oven and allow the cookies to cool for at least fifteen minutes before you remove them from the pan. Once they are completely cooled, frost them.
